Now lets be honest, who doesn't like a Marshmallow? They're sweet, melt in your mouth and best of all can be roasted over a fire!! My only issue is that you spend around $3 for a bag and they just don't last long. Especially when you have an absolutely adorable 1 year old who walks up to the pantry door saying 'lollie? lollie? LOLLIE!"
So I was really excited to find a marshmallow recipe in the recipes+ magazine (April 2013) and just had to give it a go.

Chocolate Swirl Marshmallows
1) Grease and line a 26x16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2) Sprinkle gelatine over 1/4 cup of boiling water in a small heatproof jug; stir to dissolve. Place sugar and 1/4 cup of water in s small heavy-based saucepan over low heat. Stir without boiling until sugar dissolves. This seemed to take forever and I'm not even sure I got all the sugar dissolved before I decided to continue with recipe. Bring to the boil over moderate heat. Boil without stirring for 5 minutes (do not allow to colour). Remove from heat. Add gelatine and essence; stir until dissolved.

3) While the sugar syrup is boiling, melt the chocolate. I use my handy chocolatiere machine, but you can do this easily in a microwave or on the stove (putting chocolate in a heatproof bowl over a pot of heated water).
4) Also while the sugar syrup is boiling, use an electric mixure to beat the egg white in a clean dry heatproof bowl until soft peaks form.
5) Gradually beat hot syrup into egg white in a thin steady stream. Beat for 10 minutes or until mixture is fluffy and cooled slightly.

6) Spread into prepared pan and swirl melted chocolate through it. I did this by dropping spoons of melted chocolate onto the top then dragging a fork though them. Level surface then stand at room temperature for 2 hours or until set.
7) Using an oiled knife, cut into rectangles. For me, my marshmallows were still super sticky on the edges and I wasn't sure I was going to get them off the baking paper. But the oiled knife is fantastic, it slid through the marshmallow and I even used it to slide underneath each piece to lift it off the paper. The result, nice marshmallow rectangles.
8) Toss in sifted icing sugar, shake off excess. Ok, here I wasn't sure how to toss sticky squares in icing sugar without ending up with a giant sticky mass, so instead, I put icing sugar in a bowl and placed the pieces in it, making sure that I coated each sticky side in the icing sugar and then shook off any extra. I was quite amazed because suddenly, instead of having really sticky rectangles, I had non-sticky marshmallows!!
